compounds of toasted cumin are the substituted pyrazines 2-ethoxy-3-isopropylpyrazine,
2-methoxy-3-sec-butylpyrazine, and 2-methoxy-3-methylpyrazine. In herbal medicine, cumin is classified as stimulant, carminative, and antimicrobial.
